We have several variations of rice dishes and I figured why not add
one more to our culinary repertoire? I used ugwu (spinach) for this
meal but feel free to use any green vegetable available to you. They
are great sources of vitamin C and are great for battling common
colds. Enjoy this simple quick dish.
Ingredients
One cup of rice
Two cups of chopped green vegetables (spinach in this case)
One tablespoon of butter
Seasoning cubes
One teaspoon of chilli powder
One teaspoon of lemon juice
Two cloves of garlic
Method
Step 1:Wash and bring to boil your rice for about 10 minutes.
Step 2:Chop your green vegetables and set aside. Strain the water from
the rice and reduce the heat. Add your vegetables, butter, lemon juice
and chili powder.
Step 3:Chop your garlic and add to the pot of rice with your seasoning
cubes. Allow to steam on low heat till the rice is soft.
Serve hot with any protein of your choice.
